can you run more than one steam head by splitting the copper line coming out of generator?

Yes, that may be done. However it will increase the volume of condensation coming out of the steam heads (if the steam generator is not below the steam room) and if the steam pipes are not identical in length and pitch, majority of steam will exist out of the closer outlet from the split.
